Fried Rice

  • 300 gm Basmati rice
  • 1 medium sized Oonion thinly sliced
  • half Capsicum thinly sliced, you may choose different colors of capsicum like red green yellow
  • 1 tbsp Dark soya sauce
  • 1 tbsp Green chilly sauce
  • 1 tsp Vinegar
  • 1 tbsp Garlic
  • 4 to 5 Green chillies finely chopped
  • 1 tsp Salt
  • 1 tsp Ground Black pepper

Method:

  • Wash and boil the rice in a pot full of water until it is 90 per cent tender.
  • Drain the water and spread the rice over a colander so that it doesn’t cook any further.
  • While the rice is cooking set a pan on high heat and add vegetable oil.
  • Once hot, add the garlic, green chillies and fry.
  • Add the sliced onions and capsicum. Stir fry them for 2 minutes.
  • Then add all the sauces - Dark soya sauce, Green chilly sauce, Vinegar.
  • Fry for a minute then add salt and ground pepper.
  • Once the rice is done immediately add the rice to this mixture and fry.
  • Mix well till the rice is coated with all the sauces.
  • Garnish with spring onions and serve immediately.
